Freshly harvested Pacific Oysters are steamed and opened, then brined in small batches. The brined oysters are placed on stainless steel smoke racks and smoked with maple chips. Lightly cured with salt, organic sugar and a hint of organic garlic and onion. A true classic that allows the fresh, briny flavor of the oysters to shine.
