Miche - our signature loaf combines a blend of rye and wheat flours, a whole grain sourdough starter, up to 68 hours of fermentation and a long, dark bake to create a loaf with maximum caramelization, a deeply complex flavor, and a sturdy crust— the best presentation of slow fermentation. This loaf's dense yet tender texture and delicious flavor make it a pleasure to eat whether topped with a generous slathering of rich softened butter, used as a hearty base for a flavorful tartine or simply enjoyed on its own.  

Multigrain- Cracked rye, cracked oat, spelt, and sunflower are fermented together for complex grain flavor and unique texture. A tighter crumb makes this a perfect sandwich bread.BRDMIX2

Campagne- Traditional country bread made with rye and wheat flours, with balanced acidity resulting from complex fermentation. This loaf has a thick crust, soft crumb, and distinct aroma. Makes a great sandwich or table bread.

Seeds & Grains- Wheat, buckwheat, rye, millet, oats, poppyseed and sesame combine to produce a delicious sandwich loaf with just the right combination of soft texture and multigrain flavor.

Pain de Mie- A brioche-style sandwich bread made with all white flour fermented with milk. This is a traditional bread of France that, being square in shape, is possibly the world’s most sliceable loaf.

Raisin Walnut Campagne- Sourdough, Thompson Raisin, Walnut, Black Peppercorn

Olive Campagne- Gaeta, Cerignola, Sicilian, and Taggiasca olives
