Your favorite spiced chocolate in a traditional Bûche de Noël.  Layers of royal cinnamon cremeux and chocolate mousse on top of a burnt cinnamon Guajillo syrup soaked chocolate sponge.  The layers are then enrobed in a roasted vanilla mousse and coated in a chocolate glaze before being decorated with piped of meringue.
