This semi-firm cow's milk cheese is washed in saltwater as it ages, giving it a briny kick once it reaches maturity. It has a meltingly tender texture with a milky flavor punctuated by subtle fruity notes. We like it melted on our sunflower rye bread and topped with a bit this cherry jam.
