Olsagasti's Anchovies à la Basque are a beautiful, substantial presentation of white anchovies covered in a marinade of olive oil, garlic, cayenne, wine vinegar and a light touch of salt. The leftover oil is a flavorful bonus you can use for sautéing vegetables or shellfish.
